I grew up in a coastal area so we pretty much eat seafoods almost everyday because my father was a fisherman. So when I migrated here in the States, that was the most difficult challenge for me, finding the food that I used to love eating in my own country.
But when you're far, you have to do what you gotta do to survive, even if it meant, getting the foods that are frozen, can goods, in exchange of the fresh ones that you have in your own country. That is how we live here in foreign countries. But even so, you get to appreciate how good those things are if you find them in the store, you feel like you're "At Home".
I am blessed that my husband can tolerate the smell of seafoods when I cook it, some don't allow their wives to cook them inside their house coz they think that it's insulting or disrespectful (based on what I read).
My kids and I love fish, especially my daughter. My husband can eat fish but it has to be fried and it has be galunggong.
We also love shrimp (daughter and I), be it halabos or sinigang, it doesn't matter. Hubby always buys us a box of shrimp which cost $20 or some bucks but its worth it.
The last time we went to the oriental store, I saw some fresh bitter melon or ampalaya, so I bought a piece. I wanted to make pakbet but since I did not find any other veggies to goes with it, I just cooked it with shrimp and coconut milk. Ampalaya is not my favorite veggie but sometimes i crave for it.
Just remember....

Oo nga, you have to adjust in the US where you cannot have as much fresh seafoods as you want, not unlike in your native town in the Phils. Pero meron kang isinulat na ikanagulat ko. Ngayon lang ako nakarinig nang paksiw na hipon sa buong buhay ko, lol. Hindi ko alam na napapaksiw pala ang hipon. Baka naman variant yan nang ginataang hipon? As usual, pareho kayo ni Rylie nang taste sa hipon. Talagang carbon copy mo siya. Thanks for the post. God bless you all always.

waaaaa...sis ano lasa ng shrimp with ampalaya...mapait ba? never ko pa kasing na try yan eh...ehehhehe!
woi, super mahal talaga ang shrimp dito...kahit din naman sa pinas...pero parang mas mahal ang shrimp jan sa inyo k sa dito...ehehehe!

yan ang pinoy, maabilidad!! hahaha. Inimagine ko lang dito ang pakbet mo with only bitter melon as ingredients haha.. Naku kung sana lang pwede ako magpadala ng fresh veggies dyan to complete your pakbet.. panalo ang timpla mo sis, kahit sa shrimps kahit halabos lang.. tamang tama sa lasa!

I just realized that I logged in to hubby's account...waaaaaa...always nalang to ah...hahaha....I am using his PC kasi pag nag dadrop ako ng EC or adgi...kasi I try to prevent my laptop on getting viruses....:)

never tried that amplaya with coconut milk .hmm,good idea.
my husband don't mind if i cook seafood in the house but you will not let him eat it .he wants only fresh fish and not the frozen one or from the fish market.
Just like your hubby, mine also goes to the asian store to get me a $20 box of shrimp, he knows that I love it, especially with coconut milk. I love fish also, and I love it fried or paksiw. hubby doesn't are of fish unless it's fillet and deep fried, but not galunggong. I love galungong eveersince I was a child (yun lang kasi ang mura nong araw)
We're lucky that our hubbies let us cook our smelly food even if it means they have to hide in the bedroom not to smell it.
