I picked all of the tomatoes from my garden because we been having frost. If they ripen up, it's good but if not, it's okay. My husband loves fried green tomatoes but I want to try how it would taste like when I marinate it in pesto and bake it.
I also pre-boiled some chicken legs before marinating them in pesto.I use the Knorr pesto mix sauce.

To make the sauce:
- Whisk sauce mix, 3/4 cup water, and 1/4 cup olive oil in a small sauce pan.
- Bring to a boil while stirring constantly.
- Reduce heat and simmer, stirring occasionally for 5 minutes.
- When the pesto is done, just rub it in the chicken and green tomatoes.
- Let it sit for about 30 minutes and bake it in 350 degrees heat for 30 minutes.
I also put some pesto sauce to the steamed mixed veggies that I prepared.
Just like fried green onions, hubby also loved the baked ones with pesto.
The chicken absolutely tasted so good!

I haven't tried pesto, sis. I am going to try this one. Also, I am surprised that your hubby loves green tomatoes. Hubby and the rest of the the people here in the neighborhood were surprised when I told them we eat green tomatoes. They said they only eat the red ones.
I myself love fried green tomatoes. I am grabbing all mine b4 dark today. I am going to fry mine with some breading. Dip in milk, then seasoned flour. Then I set in fridge for a few for it to set. Then drop in deep fryer for maybe a minute or so. Then I put in paper towel lined colander and finish making the rest. Yummy stuff that way. I think your way sounds good too. Let us know how it turns out.
I live the combination of Chicken and Pesto! I don't know if there's Knorr pesto here.
That looks delicious. I have never tried pesto as a marinade but I think I may have to try it now.
