I baked these banana muffins on the first day of February. We had a couple of bananas that were overripe so I thought of making muffins out of it.
Here's the recipe I followed from the tasteifhome.comIngredients
1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas
1 egg
1/3 cup vegetable oil
1 teaspoon vanilla extract
Directions:
- In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened.
- Fill greased or paper-lined muffin cups half full. Bake at 375° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
The only thing different that I did from the recipe above is the addition of chopped almond. I added like half a cup of it and they were delicious!

Yum these look and sound great! My kids LOVE banana muffins so I'm pretty sure they'd love something like this! I know I would. So I may have to give them a try!
Those do sound absolutely delicious. I love the taste and smell of almonds in almost anything so to combine that with bananas would be delightful. I have made banana bread with pecans before, so I would definitely try out this combination as well.
These look absolutely amazing. I love baking muffins, and banana is one of my favorite flavors. These would be so great with coffee in the morning. Yum!
These look very good. I have made a similar one on my blog. I love the taste and smell of anything almond. I am sure that the banana gave it just the right sweetness too.I will definetly try this recipe out in the very near future.

These look yummy! How do you think they would be with mini chocolate chips in them? Yes, I know that takes away the 'healthy' part, but...I'm going to try it!

This is a great way to use banana! Sometimes I have sorry-looking bananas in my kitchen. I heard the riper they are, the better the flavor. Thank you for the yummy idea :)
Oh my goodness, these look so good! I love anything with almonds and this is the perfect combo with the banana, and i would assume that it is healthy, at least that is what I will tell myself.
I love adding vanilla flavor to cakes and breads for that homemade taste. Your recipe sounds delicious and easy to prepare.. I shared a gluten free version of banana bread on my blog some time ago with similar ingredients. I'll have to try it with almonds the next time I bake.
Oh great idea! I usually do banana chip cookies and banana cake when we have ample stocks of banana. This one I haven't done yet! Thank you for sharing, I will definitely try this recipe.
