I still have a box of gluten-free brownies here in my pantry so I decided to bake it while my daughter was cooking dinner. It was actually my way of sneaking in to keep an eye on her lol. I have tried baking this kind of brownie with different flavors by adding nuts, fruits or coconut shaving and I can say that I like them all.
Ingredients:- 1 pack Glutino gluten free pantry double chocolate brownie mix
- 2 eggs
- 5 tbsp melted butter
- 1/2 cup coarsely chopped pecans
- 1/4 cup sweetened coconut shaving
- 1 tsp sugar
- Preheat oven to 350 degrees. Spray 8x8 inch pan with vegetable oil.
- In a large bowl, beat eggs for 3-2 minutes. Gradually add dry mix. Beat to moisten.
- Add butter and stir until combined.
- Fold the nuts and lightly mix.
- Pour in prepared pan and bake for 25-27 minutes.
- Combine the coconut shaving and sugar. Sprinkle the coconut mixture on top.
- Cool completely. For best result, freeze 1 hour before cutting.
