Pastry Chef

 Even if Ms. Burrito was feeling sick the other day, she still make herself busy at home by  watching Giada at Home and made this cake  play dough.  She wants to be a pastry chef.

Coconut Cake

My Nanay (Mom) here in the neighborhood, baked us coconut cake during our wedding anniversary. Thanks a bunch Nanay Ruth!  She used ground coconut  meat for toppings.

  • My sister who is in fourth year college is very busy doing her thesis.  She apologized  for not  communicating with me more often because of her hectic schedule.  I told her to   check out college-paper.org and   see if she could find any  help from that site.  I know how hard it is to  write a thesis, I have been there!
August 28, 2012:
  • Ms. Burrito did not go to  school today, she wasn't feeling very well.
  • I had to get EJ earlier from school and took both of them  to the dentist.  Thanks Nanay Ruth for coming with us and for giving us a short tour up the hill.
  • We ate at Eat n' Park after the  dentist's visit.
August 29, 2012:
  • My first day of volunteering as a lunch lady in school.  I was nervous at first but I ended up having fun with the other moms.
  • We visited  Dad  when my husband arrived from work.

Fun Fiesta Forks

I don't have any problem with my kids eating fruits. They each have their own favorites and to make it more fun for them, I have some stuff that they love to use like these colorful forks and sword stick.

  • Oh I got this  very bad migraine since yesterday.  It just won't go away  even with  my migraine meds.  This is probably cause  by  an overwhelming feeling of sending both my kids to school.  I thought that I would enjoy my free time at home but I was wrong.  It's hard not having them around.

Giada at Home

What is your child's favorite show? Ms Burrito love fashion and cooking shows. She watches every episode that Giada at Home has. In fact she record every episode so she can watch it over and over again.
While watching, she also makes what Giada is making.  She uses her play doh.

  • TGIF!  I am so glad that my son survived the first week of  school without any problem.  He did so much better than I anticipated lol.  Everyday, he asked me the same question though "Mom, am I off tomorrow?" Lol.
  • He did however caught a cold   in just three days  but he is okay.

  • We had a get together at my  FIL's home.  Jen made  a bunch of chicken wings.

  • Did my work out while doing laundry.

Peanut Butter may be the IDEAL Weight Loss Food

Peanut butter is not low in calories. In fact it is high in fat, so it may not seem like the ideal food for those seeking to lose weight, but if you haven’t thought of peanut butter as a diet food maybe you should. Things are not always what they appear to be on the surface.

Peanut butter has a lot to offer:

It is satisfying. A little peanut butter goes a long way in quieting hunger pangs.
It contains plant proteins. After all peanuts are actually peas or legumes to be precise.
The fats it contains are healthy fats.
It is loaded with vitamins and minerals.
It is versatile and goes well with virtually anything - and good at any time of day.
It satisfies longer, helping to reduce the need to eat more foods in a shorter time span.


The fat content of peanut butter is similar to olive oil

During a test to decide the effects of peanut butter on the heart, participants were divided into two groups. Of those who included peanut butter in their daily diets the test results showed an impressive 21% decrease in cardiovascular disease risks. Olive oil contains oleic acid and so does the peanut. This is an omega 9 fatty acid and is one of the healthiest fats in the diet showing remarkable results in lowering LDL cholesterol levels, while raising good cholesterol.

Peanuts are loaded with nutrition

A peanut contains the flavonoid resveratrol which helps improve the blood flow to the brain, reducing the risk of stroke, Alzheimer’s and other age related cognitive diseases. It also contains vitamin E, niacin, pantothenic acid, folate, protein, phosphorous, potassium, zinc and manganese.  

Making peanut butter is simple

If you’re concerned with the fat content of the leading peanut butters you can make your own.  If you use Spanish or Virginian peanuts they contain their own oil so you may not have to add much or any oil. Other peanuts require 2 tablespoons oil per cup. Add sea salt to taste and blend until you reach the desired consistency.

Peanuts also lower the risk of type 2 diabetes

Because peanut butter has glycemic index of 14 (while pretzels has one of 83) it stands to reason that peanuts, while satisfying your hunger will also aid in keeping blood sugar levels where they should be.

Peanuts are versatile

Add a little peanut butter to your favorite fruit and blend to make a fruit smoothie. Put some on celery sticks to make a satisfying crunchy snack.  Toss some lettuce and apple slices with peanut butter to make a Waldorf salad. Top some whole grain bread with peanut butter to improve fiber or stir some into hot oatmeal for more flavor and protein. There are virtually dozens of ways to add peanut butter to your diet and each one is healthy and tasty. Just keep in mind that the recommended daily portion of peanut butter is 4 to 6 tablespoons a day.

Scones

My skills in baking is very limited, I don't much about it as I never did bake when I was still in the Philippines. I am just thankful that there are people who are filling that void for my kids. My husband knows how to bake a lot of stuff ( mostly desserts) than I do. My sister -inlaw also bakes with my kids sometimes. In our neighborhood, it's Ms. Burrito's Lola (her adoptive Grandma).  Ruth loves  doing kitchen activities with Ms. Burrito.
A couple of days ago, she showed her how to  make scones.

Candy for Sweet Tooth

Every time we go to the store, our little man can't help not to  get himself a sweet treat. He would always   hide it from me because I don't want him  eating too much sweet but hubby would let him because he understand how  it feels when a sweet tooth  is craving for some sweets.  Hubby and I allow the kids to have  some candies but not too much.  It's better to start  teaching them to  eat healthy  at a young age in order to have a healthy life.

Baking Zucchini Bread With Lola

Even though we did not have a big vacation this year, our kids had so much fun with friends and family around. Ms. Burrito had so much fun baking with her Lola Ruth.  I took pictures of them when they  baked  the zucchini bread.
I am so glad that we have great neighbors here.  They are like family to us and they treat us like their family as well.  My kids love  their Lolo and Lola as they let them do  things that are sometimes  restricted to us like getting messy lol.  But it is okay, I guess  grandparents has to treat their grandkids differently than the parents.  
Anne, the author of ‘How To Build Confidence’ blog shared this recipe that she found online.  This post also comes to you with the compliments of pay day loans.  So if you want to   try this recipe, fell free to make it and  if you would, give me a  taste of it  hahaha (just kidding).

Zucchini bread recipe for 2 loaves of bread
Ingredients:
3 cups of all purpose flour
3 eggs
1cup of olive oil
1 ¾ cups of grated zucchini
1 teaspoon of baking soda
Half teaspoon of baking powder
Half cup of chopped walnuts
Half a teaspoon of salt
1 1/2 teaspoons of vanilla extract
2 ½ teaspoons of cinnamon
Half a teaspoon of nutmeg
1 cup of chocolate chips (if you like chocolate)

Method:

  1. Preheat oven to 350°F.
  2. Grease and sprinkle light a light layer of flour on two 8×4 inch loaf pans.
  3. Firmly whisk your 3 eggs in a bowl.
  4. When this is fluffy, add the oil, sugar, zucchini and vanilla.
  5. Then add flour, cinnamon, baking soda, nutmeg, baking powder and salt, (and chocolate chips if using).
  6. Stir all this in with the egg mixture. Divide the finished product into the pans you prepared.
  7. Bake for I hour.
  8. Check with tester to make sure your loaves are finished.

August 16, 2012:
  • This past week, I couldn't really  blog so much as I am busy with my kids  and other stuff.
  • I  registered them today and  brought their supplies to their respective  teachers.  Our bank account is drained after the tuition fee payment lol.  Oh boy, it's definitely expensive but it's worth every penny spent.
  • The Burritos went with their Lola tonight and had some ice cream from an ice cream parlor nearby.
  • I got used to hubby  being here all the time when was  doing school but now that he is working from Monday to Friday, it feels so weird.  I have a big adjustment this year since both of my  kids are going to school and hubby is working.  The good thing is that, I can do my online tasks in peace while they are away.  I also have time to do other things at home that I couldn't do when they are all here like  organizing and stuff.

  • Went to the store and  bought  some additional   school supplies for our Burritos  and some groceries as well.

  • First day of school was stressful not because of the things we have to do but for the fact that both of my kids are gone wahhh.  Me and my son  did not have a good night sleep, I think we were both stressed out thinking about it.

  • Hubby and I  went to the front house of our neighbor who is moving.  They are selling  a lot of things, hubby bought a set of tools and I bought a set of tennis racket set.
  • We are heading to the mall later  this afternoon.  Right now, it is so hot outside.
  • We visited my FIL after we did a little shopping spree for Ms. Burrito.  She was so happy  that she got two pairs of earrings, a dress, two pairs of shoes, and a  a bathing suit.

Egg-cellent!

Eggs are pretty much present at our kitchen table every morning. Hubby and son love to have eggs for breakfast. My daughter is not crazy about eggs but if you fill it with veggies, she would eat it. Below are just some of the eggs that I made for breakfast, you decide which one you like.
deviled eggs and rolled up eggs with spinach. 
omelet with  spinach and scrambled eggs.
boiled eggs and sunny side up eggs (my son called  it a duckling)
Ms. Burrito made this omelet with  chopped  green beans and tomatoes.
rolled up eggs with hotdog and cheese and  lettuce.
Individual omelets with bacon bits and tomatoes filling.
My son called this Elmo.

Looking at this pepper reminds me of the Toyota insignia a little bit.  What do you see?  I read something online that the  symbol of Toyota  means:

  • Today, hubby and I  have been married for 9  years.  It's been a blissful marriage and we are blessed with beautiful children and loving family and friends around.
  • Our celebration was  very simple.  We juiced our tomatoes with the help of the kids.  Then we went  shopping for some school clothes and shoes.
  • We ate dinner at Eat 'n Park and visited my FIL afterwards.
August 12, 2012:
  • We got a lot done today.  Hubby shaved Mr. Burrito's hair, he mowed the yard, and cleaned the car.  I cleaned the  house (dusted, vacuumed, cleaned the basement, and put tall the  cardboard boxes in a trash bags).
  • We visited Dad and  bonded with Jen's family.

Fruits Variety

When we go buy our groceries, I make sure to get a variety of fruits to snack on at the house. Plums, bananas, kiwi, oranges, grapes, and strawberries, are the popular ones for the taste buds of the family.

We saw these donut shaped peaches at Walmart. I giggled when I saw that it's literally called Donut Peaches.
