My husband love lasagna and spaghetti, he can eat these dishes at any time. Last week, he's been hinting that he wanted some lasagna so I made a pan. I have some eggplants that I picked from my garden so I chopped up one big eggplant into finely pieces and cooked it with the ground beef. I did not tell him about the eggplant when I served it to him and at the end I asked him how was it and he told me that it was excellent! That's when I told him that I incorporated some eggplant in the meat and he said that it was really good.
My kids are very fond of helping me when I make lasagna as they make the cheese mixture. I used our homemade sauce when I cooked the ground meat and eggplant and it was delicious!

That's nice ate Rose, you made lasagna with a twist! It made me hungry looking at the photo. I have been wanting to eat lasagna but unfortunately we have no oven, those instant lasagna in convenience stores are not that good. :)

This is a good way of having your kids eat vegetables without them knowing it. Hide them in their favorite dish! hehe
Hi Mei, yes it is, I just thought of trying to incorporate the eggplant since my husband and daughter likes it anyway but my son doesn't so to sneak it in his lasagna, that was my trick hehehe. He did not even realized that there is eggplant in it. Just chopped it very small so it would blend to the meat.
Have not tried this yet-- looks very yummy and healthy too!
That looks really good! I like a lasagna with eggplant because it is a bit healthier that way. I actually made just all eggplant one time and it was good. :)

OMG, this looks yummy! Lasagna is one of my fave! I like your idea of putting eggplant sa lasagna. Ma try din nga minsan. Maganda to kasi yummy na, healthy pa dahil may halong veges. :)
